1 tablespoon extra virgin olive oil
4 ounces Canadian bacon, cut into small cubes
1/2 cup chopped onion
1 14-oz can diced tomatoes
1/2 teaspoon dried oregano
2 large zucchinis
1. In a large, non-stick pot, heat the olive oil to medium-high heat. Add the Canadian bacon and onion, and cook until light brown. Add the tomatoes, oregano, and salt and pepper to taste, and cook for five to 10 minutes.
2. Use a spiralizer to turn the zucchini into "pasta". Add the zucchini to the tomato sauce and cook for three to five minutes, or until the zucchini is al dente. Serve and enjoy!
