Veggie Frittata for One
This is one of my top, go-to dinners. Make this with any veggies you have one hands: chopped broccoli, shredded carrots, onions, bell peppers, spinach - the possibilities are really endless. For a complete meal, add some brown rice to the mix.
1 egg + 2 egg whites
1/2 cup chopped veggies
2 tbsp reduced fat feta cheese (optional)
salt + pepper
1. Preheat 2 tsp olive oil in a small egg pan to medium. Spread the oil around with a napkin so it evenly coats the surface of the pan. Cooking spray works just as well.
2. Beat the eggs in a bowl until the yolk and egg whites are well combined. Add the chopped veggies, and salt and pepper to taste.
3. Pour the eggs into the pan and cover the pan with a lid. Cook about 10 minutes, or until the eggs set. If you're feeling brave, give the frittata a flip - the worst that can happen is the frittata will break. It will still taste good!
