SWEET POTATO WEDGES
2 medium sweet potatoes
1 tablespoon olive oil
salt + pepper
1. Preheat the oven to 400 degrees.
2. Wash and dry the potatoes. Cut them in half, longwise, and then cut each half into wedges.
3. Place the potatoes in a large bowl and toss with olive oil, a light sprinkle of cinnamon, salt and pepper.
4. Spray a baking sheet with cooking spray. Arrange the potatoes in an even layer so that they are not touching each other.
5. Bake for 35-40 minutes, or until golden brown.
