Pork Be Tender: 3 Ways
I couldn't decide which of my go-to pork recipes to share with you, so I went with all three. They're each as easy and as flavorful as the next, so make your favorite, or make all three!
per 1 person serving
1 boneless, center cut pork chop, about 1-inch thick
salt + pepper
For Honey Mustard Chops:
1 tbsp yellow mustard
1 tbsp honey
dash of red pepper flakes (optional)
For BBQ Blue Cheese Chops:
1 tbsp barbeque sauce
1 tbsp reduced fat gorgonzola or blue cheese crumbles
For Pork Parm Chops:
1/4 cup whole grain bread crumbs
1/2 tsp dried oregano or Italian seasoning
fresh tomato, seeded and sliced
1 tbsp shaved parmesan cheese
1. Although optional, this step is about infusing the pork with flavor. It's called brining: to make the brine, fill a plastic container with water, add 1 tbsp salt and freshly ground black pepper. Use a fork to poke holes in the pork, then place each piece in the water. Cover with a lid or plastic wrap and refrigerate at least 30 minutes. When you are ready to cook, remove the pork from the water and pat both sides dry with a paper towel.
2. Preheat the oven to 375 degrees. Heat 1/2 tbsp olive oil in a large pan over high heat. When the oil is smoking, add the pork to the pan and cook for 1 minute on each side, or until a brown crust forms on the meat. The idea is to sear the pork to lock in the juices.
3. Transfer the pork to a baking sheet that's been lined with foil or parchment paper (easy cleanup!) Top with your choice of ingredients, then bake for 15 minutes until the pork is cooked through.
To make Honey Mustard Chops:
Whisk together the mustard and honey, and top over the pork before placing it in the oven.
To make BBQ Blue Cheese Chops:
Top the pork chop with barbeque sauce and blue cheese before placing it in the oven.
To make Pork Parm Chops:
Whisk the egg in a bowl and set aside. In a separate dish, combine the bread crumbs and oregano. Pass the chops through the egg, then the break crumbs. Cook in the pan for 1 minute on each side. Top with freshly sliced tomato and parmesan cheese before placing it in the oven.
