Maple Mango Frozen Yogurt
Ready in: 2 1/2 hours
1/2 cup fresh mango, diced
1 1/2 cups plain, nonfat Greek yogurt
1 cup 2% milk
1/4 cup maple syrup
2 teaspoons vanilla extract
1. Heat a non-stick skillet over medium-high heat. Add the mango and cook until slightly soft. Transfer to a plate and place in the refrigerator to cool.
2. In a large bowl, whisk together the yogurt, milk, maple syrup, vanilla and a pinch of salt until smooth.
3. Turn on your ice cream maker (after following your manufacturer's freezing instructions), and pour the yogurt mixture into the machine, allowing it to churn until it's the consistency of soft serve, about 10-15 minutes. Add the mango and churn another minute, until the mango is well-combined.
4. Turn off your ice cream maker, and serve immediately for creamy soft-serve fro-yo. Transfer the frozen yogurt into a freezer-safe container, and allow the frozen yogurt to set for at least two hours before serving.
