Sweet Passion Fruit Dressing Salad
I love passion fruit. When I visited Costa Rica last year, I ate three fresh ones in a row during a random stop at a farm stand on the side of the road. You don't have to cook for a crowd to treat yourself to a fancy meal, especially when it comes together this quickly.
For the Salad-
leafy greens (any kind you like)
1 pear, red or yellow, diced
reduced fat blue cheese crumbles
Passion Fruit Salad Dressing-
½ cup of passion fruit puree
¼ cup of extra virgin olive oil
1 tbsp honey
salt + pepper
1. To make the salad dressing, whisk the fruit puree, olive oil, and honey in a bowl. Season with salt and pepper.
2. Toss the greens, pear, blue cheese crumbles and dried cranberries with the salad dressing, and serve.
Chopped walnuts or pecans would be awesome in this salad -- I didn’t have any on hand today.
Passion fruit puree is generally available in the frozen section of your supermarket - it’s 100% fruit, no added sugar. Just let it thaw in the fridge so it's ready for you.
If you can’t find passion fruit puree, or just don’t like passion fruit, a balsamic vinaigrette would be perfect on this, too.
And if you don’t like blue cheese, you can use feta instead.
