HummuSo Smart Green Salad
I love salads, I hate bottled salad dressings. All humbleness aside, I felt like a genius when I turned my hummus into a rich, creamy and delicious dressing for greens and veggies. And let's be real here... what healthy gal doesn't already have hummus in her fridge?
Ready in: 5 minutes
2 tablespoons of your favorite hummus
1/2 tablespoon water
2-3 cups mixed greens
1/2 cup sliced cucumber
1 plum tomato, thinly sliced
1 tablespoon crumbled feta cheese
1/4 red apple, chopped
1. In a small bowl, whisk together the hummus and water until well-combined.
2. Arrange the greens and salad toppings in a salad bowl. Pour over the hummus dressing, toss and enjoy.
Preparing now and serving later?
Prepare the hummus dressing in the bottom of your salad bowl. Arrange your greens and toppings, then store in the refrigerator. When you're ready to serve, just toss!
Brown bagging it?
Prepare the hummus dressing in the bottom of your tupperware, then add the greens and toppings. When lunch time rolls around, give your tupperware a good shake (with the lid secured, of course) and enjoy!
Cooking for a crowd?
Make more dressing sticking to the following ratio: 1 part hummus to 1/4 part water.

Grilled chicken, steak, or even garbanzo beans go great in here too.
