Girl's Night Sliders
Wouldn't your friends thank you if you treated them to a yummy meal that didn't send them home wishing they hadn't worn their skinny jeans? Here is one idea. I took the ultimate bar food and made it skinny - these sliders are very low in fat, and high in protein and fiber.
Ready in: 20 minutes
1/2 lb ground turkey breast
3 sundried tomatoes, chopped
1/4 cup pitted kalamata olives, chopped
1/4 cup feta cheese crumbles
1/4 cup plain, nonfat Greek yogurt, plus more
to dress the sliders
2 teaspoons lemon zest
1 teaspoon paprika
1/4 teaspoon red pepper flakes
3-4 basil leaves, chopped
1 tablespoon olive oil
8 whole grain slider buns*
1 plum tomato, cut into 8 slices
1. Add the turkey breast, sundried tomatoes, olives, feta cheese, 1/4 cup yogurt, lemon zest, paprika, red pepper flakes, and basil in a large bowl. Season with salt and pepper. Use your hands to combine the ingredients. Form the turkey into 8 even-sized patties, each about 1/2-inch thin and slightly larger in circumference than the buns.
2. Preheat the olive oil in a large nonstick pan over medium heat. Add the patties to the pan and cook for 4-5 minutes on each side.
3. Place a pattie in each bun. Serve with fresh tomato and arugula, and top with a dollop of yogurt.
