Dark Chocolate Dipped Sweet Potato Chips
1/2 cup dark chocolate chips
6 ounces unsalted sweet potato chips (store-bought will save you lots of time!)
coarse sea salt
1. Melt the chocolate chips over a double boiler by filling a saucepan with an inch of water from the tap and bringing to a simmer. Place a glass bowl over the saucepan and add the chocolate chips. Stir with a plastic spatula until the chocolate is completely melted, shiny and smooth. Remove from heat.
2. Dip each sweet potato chip halfway into the melted chocolate, shaking off any excess chocolate so that only a thin layer of chocolate coats the chip. Lay the chips on a baking sheet. Sprinkle each with a few grains of sea salt and allow to cool until the chocolate hardens.
