I love Saturday mornings. With how much we travel for work, it's really our only day of the week to sleep in, relax and hang out. (On Sunday mornings, Jeremy is playing basketball with the boys and I'm sweating out my weekend cocktails at OrangeTheory.) There's nothing I love more than rolling out of bed, opening the fridge and whipping up a fun, yummy brunch with whatever we have on hand. Today, that was spicy (and lean) turkey sausage, a sweet potato and eggs…always eggs.

Introducing "Fab Finds + Eats" -- a brand new series on the blog where I'll share some of the delicious and inspiring dishes I get to savor beyond my own kitchen. (In case you thought I had fallen off the map, I haven't -- I've just been traveling all over it.) That's not to say I've stopped cooking. On the contrary, it's as much a part of my life as ever, plus these days I'm cooking for two. Cooking, that is -- not eating! But it also happens to be that my job keeps me on the road, visiting places far and near, and more than just souvenirs, there's plenty of culinary inspo that comes home with me. So this is where I'll share it and celebrate it, in hopes to inspire you to either get in the kitchen or to get out there, find it and try it.
GREEN CURRIED CAULIFLOWER SOUP
I love cauliflower. Love, love, love, love, LOVE cauliflower. As much as it angers me to pay $4 - $5 for a head of it, I can't seem to pass it up at the store. While simply roasted (with olive oil, salt and pepper) and "creamy" soup seem to be my go-t0 approach, I thought I'd shake things up with a little green curry paste, another slight obsession of mine. This was the (very delicious) result.
SWEET POTATO WEDGES
I'm back with delicious sweet potato wedges, a favorite around this house. (They're even popular with the pup.) On our first official date, my boyfriend made these as a side dish, and truth be told, they were the best sweet potatoes I had ever had. A year and a half later, I like to say I "perfected" them -- sorry bebe. ;) Whether or not he agrees, I think you'll find these yummy and super easy to make.
Happy New Year? It's been forever, I know. I can come up with a handful of excuses as to why it's been months since I last published a recipe, but it happens to all of us, right? We fall off the wagon and put things on the back burner. The good news is this recipe was so quick and easy that I could not NOT share it with you, so here goes. Six ingredients, 20 minutes, one handy-dandy kitchen gadget I have become obsessed over, and voila… dinner is served.
Dark Chocolate Zucchini Bread
With the exception of a pumpkin zucchini bread I made a couple of years ago (my god, has it really been that long?) I'm a newbie at zucchini bread. Truth be told I wasn't really sure how it was supposed to taste, until I tasted this… and I'm pretty sure this is it. After reading through a few recipes online to familiarize myself with what zucchini bread entails, I came up with this moist, delicious, somewhat-healthy-for-you recipe.
Pork Chops in Chipotle Mole Sauce
No need to spend all day slaving over a pot to make a dish that tastes authentic. This mole recipe uses a a handful (or two) of spices and everyday pantry items, all of which are readily available at your local supermarket or… in your pantry. (I swear, I think I hit up four stores before I gave up on my search for dried guajillo and ancho chile peppers… and I live in MIAMI!)
