It's our last Friday in office before our holiday break. It's been an amazing year, and I owe most (if not all) to the wonderful team at Diamond PR, which more than just my workplace, is home to my second family. To toast to such a fabulous year, I decided to whip up some "coquito," an eggnog-like alcoholic beverage traditionally served in Puerto Rico. The recipe comes courtesy of the San Juan Marriott Resort & Stellaris Casino.
Wishing you and yours a very happy 2014!
Serves 1 gallon
4 cans Evaporated Milk
4 cans Condensed Milk
2 cans Coconut Cream
1 liter White Rum (Don Q preferably)
1 cup Brandy
Vanilla extract to taste
Cinnamon to taste
Mix together all the ingredients and let stand in the fridge for at least 2 hours.
