You probably know I love butternut squash soup... So I made some again today ;) I also made a skinny Cordon Bleu.
Preheat the oven to 400. Butterfly a chicken breast, stuff with low fat Swiss cheese and a slice of honey ham (maybe a squirt of Dijon might have been good in there, too). Closed the butterfly, seasoned with salt, pepper and fried oregano, then wrapped the top with another slice or two of ham, like a blanket. Baked 30 minutes and there it is... delicious cheesy chicken goodness.
