What to make when you think you have no food in the fridge? Soup! In a large soup pot, I cooked an onion, sweet potato, corn, and chipotle pepper in a little olive oil. I added a can of fire roasted tomatoes, a little dried oregano, salt and pepper. In a separate pot, I boiled two chicken breasts in salted water until cooked through, transferred them to a plate and pulled the meat apart with two forks. Next I added the chicken and cooking water to the soup pot. Let it simmer for a bit... But the star of the plate:
Homemade Tortilla Strips... So crunchy... so good! I heated two tablespoons of olive oil to medium high in a non stick pot. Cut two corn tortillas into strips, then cook in the oil for 2 minutes, or until golden and crispy. Transfer to a plate, season immediately with salt, and enjoy... Very worth it to go homemade here. Plus, I always have corn tortillas on hand for an easy taco dinner.

What's best... I have soup left for days!
