I'm putting down my knife. 
I heard about this documentary through its Facebook fan page , and seeing the trailer reminded me of how good I felt  during the fours months last year when I adopted a vegetarian diet. I learned about the benefits after reading Alicia Silverstone's book, The Kind Diet. Having been a carnivore for as along as I can remember, I laughed when she challenged me to go four weeks without eating any animal products. (I really love steak, and the bloodier the better). As it turned out, it was actually easier than I thought. I even went vegan --  I replaced the skim milk in my morning latte with almond milk, then soy. I stuck to legumes (beans and lentils, mostly), grains, nuts, tons of veggies and fruit. I felt lighter and had more energy, and the way my body was working was phenomenal, if ya know what I mean. Two weeks into it, I started adding dairy back into my diet because I missed my delicious morning coffee the way I was used to it. I had some cheese and yogurt here and there, too. But for four months, I stayed away from any kind of meat - no chicken, pork, or steak. And then one day...

I was at Anthony's Coal-Fired Pizza, too hungry to wait for my veggie pizza to arrive, and I killed my streak with... A CHICKEN WING! Yes, a chicken wing. From then on, I slowly started allowing myself to eat meat. First once a week, then twice... six months later, I'm having grilled chicken, even steak, one to two times daily. Blah.

Back to the movie - I haven't seen it, so don't take this as a full on endorsement.* It just got me thinking back to a time when I felt extra good about myself, and inspired me to set a new goal: I'm going to try to leave meat out of my diet as much as possible, but not holding myself to eliminate it completely. If I find myself at a fabulous steakhouse, I'm ordering the filet. But while I'm preparing my own meals at home, or dining out where the vegetarian dishes are just as delicious, I'm sticking to grains. This morning I made a huge pot of Curried Lentils - I will pair this with brown rice, and enjoy it for days to come. FACT: pairing legumes (beans, lentils) with rice yields a complete source of protein, meaning it has all of the essential amino acids your body needs but doesn't produce, minus all of the hormones and antibiotics. It's a lot less expensive, too.

Hi,
Just found your blog. I have just become a vegetarian/vegan for the past 6 weeks, and I echo your sentiment. I have no moral/ethical problems with meat or animal products, I just want to improve my health. I do have an issue though. You have a banner for Forks over Knives and you are using it to promote your blog/business, yet you say you havent seen it? I personally find that hard to believe, but if it is true, and considering the fact that the movie has done more fore plant based diets in the past year than anything else in the past 2 decades, I would say you are both intellectually and entreprenuerally lazy. You should be an expert on this film, it may be your single best partner in your business plan. Just my 2 cents. You are a beautiful woman, and your recipes and site are excellent. I wish you well.

Hi Mark! Thanks for writing... I'm glad you enjoy my site and recipes. I did watch Forks over Knives a few months ago and really enjoyed it. I wrote this post last May - maybe I should add a footnote. Kudos on the lifestyle change - feels good, doesn't it? All the best to you!

I just found your blog through pinterest this week. Very inspiring! In fact, after reading this post, I talked to my husband about going vegetarian for Lent this year, and he agreed. We had started eating mostly vegetarian prior to me getting pregnant with my daughter, who is now 15 months old, but then I felt more comfortable with my diet having meat in it during pregnancy. We haven't really eaten vegetarian since then, so I'm looking forward to this. Thanks!

Hi Amanda, I highly recommend trying it. I am not 100% vegetarian right now, but most of the time, yes :) feels great! Let me know how it goes.. I have a lot of vegetarian recipes you can try, they are pretty easy. Good luck, xoxo!

Hello,
About 2 1/2 years ago, after reading a book (Original Fast Foods), my husband and I decided to go off animal products for 1 week. We haven't been back on meat since! I feel so healthy, energetic and even just went through my best pregnancy ever. I felt like I wasn't even pregnant, and delivered a healthy baby girl naturally. I love how I feel! We have dairy here and there, but try to keep it less than 10% of our food intake. Our kids are on board also, and we love the way we eat. I love the movie Forks over Knives. It makes so much sense that we literally are what we eat!
I could go on and on, so I will stop. Thanks for your site. I found it through pinterest, and will stop by more often!

Thanks for posting your blog. I can't wait to try some of your recipes. I am also looking into trying a lighter diet and cutting out as much meat as possible. Sadly my husband can't join me on this with his Crohns disease he can't digest vegetables. But that doesn't stop me from doing it. :)

I have always wanted to try going vegetarian but since we raise our own pork, beef and chicken/eggs, I just can't figure out how to justify it. Someday.... :)
