Dark Coco Brownies
Okay, so you can totally taste the healthy in these, but in a delicious, I-don't-feel-too-bad-about-eating-these kinda way. They are 100% whole wheat and made with coconut oil, one of my favorite ingredients.

Serves: 8
Ready in: 25 minutes

You'll Need:

1/2 cup coconut oil, melted
2 eggs
1 teaspoon vanilla
1/2 cup brown sugar
1/3 cup unsweetened cocoa powder
3/4 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup dark chocolate chips

Here's How:
1. Preheat the oven to 375 degrees.
2. In a large bowl, whisk together the coconut oil, eggs, vanilla and brown sugar. In separate bowl, whisk together the cocoa powder, flour, baking powder and salt.
3. Add the dry ingredients and the chocolate chips to the wet ingredients and stir until combined.
4. Pour the batter into a greased loaf pan. Bake for 20 minutes, or until a pick inserted into the brownies comes out clean.

I made these last night, and they were good for being "healthy". However, I added up all the nutritional content, and they come to 380 calories per little brownie! Not worth it at all.

My calorie count was 256 calories per brownie.

You are never going to have a low-cal brownie that is delicious. These brownies are just healthier alternative to normal ones, without as many empty calories. Of course they have calories; they are brownies. You have to use moderation. I used to be about 175 lbs at my biggest, now a steady 130 lbs 4 years later I can say with with certainty: Calories aren't everything.
