Fruit & Feta Summer Salad
Here's an easy one for the dreadfully hot days we are having: add some refreshing fruit to your salad for a sweet twist. I say fruit instead of watermelon (as pictured) because you can easily swap the watermelon for sliced peaches, pineapple, berries, cherries, mangoes or a bit of each.

Ready in: 5 minutes


You'll Need:
1 tablespoon lemon juice
1/2 tablespoon extra virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon agave or honey
2 cups fresh arugula
1 cup seedless watermelon, chopped
2 tablespoons feta cheese crumbles
1 tablespoon chopped basil

Here's How:
1. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, agave and a pinch of salt and pepper. Set aside.
2. On a large plate or in a large bowl, arrange the arugula, watermelon, feta cheese and basil. Toss with the lemon vinaigrette just before serving.

I absolutely love this salad. I am someone who normally never enjoys salad but the richness in flavor of this salad was spectacular.

I am someone who doesnt enjoy a salad, well you have totally changed my mind. This salad is so full of flavor, and it was absolutely spectacular.
