Broiled Barbecue 
Chicken
I learned this technique from a friend who, at first, made me think he was going to start a fire. And he almost did! After tasting it, I realized it was a delicious way to make delicious "barbecued" chicken, minus the fuss of the grill.

Serves: 2
Ready in: 15 minutes

You'll Need:
2 boneless skinless chicken breasts
cooking spray or olive oil
2 tablespoons hickory barbecue sauce

Here's How:
1. Preheat the broiler to its highest setting.
2. Using a large, sharp knife, butterfly the chicken breast so that it's about a half inch thick. Pat dry with a paper towel to wipe off excess moisture. Season with salt and pepper.
3. Spray a baking sheet with cooking spray (or coat lightly with olive oil) to prevent sticking. Lay the chicken breasts side by side not allowing them to touch each other. Cook under the broiler for about 5 minutes on each side, or until slightly charred and cooked through. Remove the chicken from the oven, baste with barbecue sauce, and broil for another minute. Remove from the oven and serve.

I've been wanting to try broiling as well. My friend made burgers in the broiler and said they were really good! I can't wait to try this chicken recipe!!
