Chicken Roasted with Cherries
I've been cooking with (and snacking on) cherries for over a week, thanks to the love affair that began with the first bite of a delicious duck braised in cherries, wine and carrots,  during my trip to Piemonte in Italy last month. Here's one way I'm enjoying them here at home.

Serves: 2
Ready in: 1 hour

You'll Need:

2 chicken breasts, bone-in with skin
1 yellow onion, peeled and quartered
1 large carrot, peeled and cut into 2-inch pieces
1 cup cherries, pitted
2 tablespoons olive oil 

Here's How:
1. Preheat the oven to 400 degrees.
2. Pat the chicken breast dry with a paper towel to remove excess moisture. Season generously with salt and pepper on both sides, then place in a baking dish. Arrange the onion, carrot and cherries around the chicken. Drizzle with olive oil.
3. Roast in the oven for 50 minutes, or until the chicken skin is golden brown and the chicken is cooked through.

I absolutely LOVE your recipes! I've recently started my own weight loss journey after gaining 30 pounds during graduate school...I too have tried the Atkins diet method first, and am not happy with the results. When I read your blog I felt so relieved that I wasn't the only one who had little success with it! Trying a method more similar to yours now...:-)

From your personal experience, what do you do when you go out to dinner with friends/family or have a family bbq/picnic? I always panic because there's so much delicious food that I want to eat, but no I shouldn't...how do you handle eating out?

Thanks for the inspiration!

Hi Mandy! Good for you that you're trying to get back on track :) Like I tell everyone who is on a similar journey, whatever you do, do not give up! The weight WILL come off if you do things the right way. To answer your question, I love going out to dinner with friends and BBQs. Sometimes it's easy to make healthy choices, while other times it's not. But that's what it's all about.. making healthy choices. While I was losing the weight, I was not very lenient with myself because if I allowed myself to have fries or a piece of cake, it was likely to lead to another bad choice. (I think it's Special K that did a commercial like that - "one good choice leads to another"). At restaurants and gatherings I focused on enjoying a healthy plate. At restaurants I chose grilled meats, salads, and veggies, same goes for BBQs. Some wine or light beer, too ;) Also for me it was a treat to enjoy food outside of what you usually eat on a regular day basis. I think the more committed you stay to your goal, the faster you will see results and nothing will make you more motivated to keep going than the results. Want a piece of bread? Make it 100% whole wheat or whole grain. Want dessert? Choose something with low sugar or no sugar added. I had a lot of sugar free stuff in my days.. don't like to promote it much on the blog because we're not exactly sure what these artificial sweeteners do, but the choice is yours. Remember, you are doing something good for yourself and you are doing it for you! Good luck, and please keep me posted! And drink lots of water! And make sure to exercise! It all becomes so enjoyable over time, believe me! xo

This sounds and looks very interesting, I have never thought about preparing a chicken with cherries. Actually, I found your blog on pinterest and am very happy about this. Your story is inspiring, your recipes wonderful creative and they look fantastic! Thank you so much for being an inspiration!

I just made this! I knew there was a reason I came across your blog when I realized I had fresh cherries that were about to go bad :p.

I loved it just the way it was, but I had a lot of leftovers (I used thighs, we prefer dark meat) so I drizzles the leftovers with lemon juice and rosemary and I'm sure it will be a nice twist when I reheat it in the oven today for lunch! :)
