Green Eggs & Ham
My version of this Dr. Seuss classic is an easy spin on your morning eggs. Serve over whole grain toast or brown rice for a complete meal any time of day.  I think next time I make this, I'll invite my friends over for brunch -- it's pretty, elegant, and very easy! Bring on the mimosas...


Ready in: 10 minutes
Serves: 1

You'll Need:

1 teaspoon olive oil
1 or 2 stalks asparagus
1 egg
crispy prosciutto
 
Here's How:
1. Heat 1 tsp of olive oil in a small pan over medium-high. Cut the asparagus into 1/2-inch pieces and add to the pan. Season with salt and pepper, and cook for 2-3 minutes, or until slightly soft. Crack the egg over the asparagus and cover the pan with the lid. Cook 2-3 minutes, or until the egg is at your preferred doneness. Top with crispy prosciutto.
