The Skinniest Pasta
This is way easier than it looks. I tried this once at a local restaurant and it was delish; however, I knew there was a little too much fat in the meat and the dish was covered in cheese. People, you don't have to cover healthy food in cheese for it to taste good... if you're making healthy food good! Here is pasta you will never feel guilty about.

Serves: 2 (or 3!)
Ready in: 15 minutes

You'll Need:

1 tablespoon olive oil
1/2 pound ground turkey breast
2 garlic cloves, crushed
1 bay leaf
1/4 teaspoon red pepper flakes
1 14oz can low sodium tomato sauce
2 large zucchini
grated parmesan cheese to serve

Here's How:
1. Preheat the olive oil in a large pot over medium high heat. Add the ground turkey and garlic, using a wooden spoon to break apart the meat. Add the bay leaf,  red pepper flakes, and season with salt and pepper. 
2. Add the tomato sauce, plus 3/4 cups of water to the pot, and bring to a simmer. Season with a little more salt and pepper.
3. Remove the ends from the zucchini, and cut each into 1/4-inch thin slices, lengthwise. (This is way easier if you have a mandolin, but not necessary.) Lay the slices flat on the cutting board, and use a sharp knife to slice into thin strips. They should look like fettuccine. 
4. Add the zucchini to the sauce and toss for 3-5 minutes, or until the zucchini is slightly cooked, but still "al dente." Serve with a sprinkle of parmesan cheese.

Im totally guilty of being a cheese 'covereer'! :( Its an awful habit, but its just so good! This sounds wonderful though! Ill have to try it! :)

try using spaghetti squash as the pasta.... its a paleo thing and works very well. You'll find it online...

it is just a thing, not belonging to paleo. It works there, but a lot of people following countless ways of eating use spaghetti squash in place of pasta/noodles!

I made this yesterday and it was soooo good!! Thank you! Mine came out a little runny, so next time I will add less water.

I am trying to workout 6 days a week and get into great shape after 3 kids, so this is definitely going to help when I have that spaghetti craving:)

I found your blog thru Pinterest and have been hooked! I made this tonight and it was amazing! I also love how little of a mess it makes- I live in a 100 year old house with no dishwasher. This was so quick and easy! Your simplistic recipes have so much flavor. You have a fan!!! :)

I agree with you! There is nothing worse than having so many dishes to do after making a great dish. I love this website, I also found it on Pinterest and make my meals for the week on Mondays. This is my 10 year old daughter's favorite dish! I doubled the amount and froze small portions for lunch. My husband couldn't get enough of it! I can't wait to try some more recipes ! You are an inspiration!

I tried this and loved it. I added a lot more spices because the sauce was a little bland, but I loved the texture of the zucchini. I usually use spaghetti squash as a sub, but I am definitely gonna switch to zucchini for a while. Thanks!

I have to admit, I was apprehensive about making this dish. When I have tried to replace noodles with vegetables in the past (zucchini, eggplant, etc.) it never works out. It usually comes out mushy or too watery.
However, this dish was the exception! It was absolutely delicious. The noodles had the perfect amount of crunch and the sauce was not plain at all.
I did take another person's advice and only used 1/2 cup of water as opposed to the 3/4 cup that the recipe calls for.
I highly recommend you try this recipe!! Even my husband raved about it and "high fived" me after dinner!!
I added the recipe to My Fitness Pal and it came out to only 285 calories! Thank you for this delicious low fat recipe!!
