Mango Parfait
It's like I rediscovered Greek yogurt all over again, and I'm finding endless ways to enjoy it. A secret to staying on track is keeping it interesting, and by that, I mean playing with flavors and presentation. There's no reason why I can't enjoy my breakfast or snack in a martini glass. Cheers to that!

Serves 1
Ready in: 5 minutes

You'll Need:
1 cup plain, non-fat Greek yogurt
1/2 tablespoon agave syrup
1 teaspoon lime zest, divided
1/2 cup diced mango* 

Here's How:
1. In a bowl, combine the yogurt, agave, and lime zest until smooth. Reserve a pinch of lime zest for garnish.
2. Add half of the yogurt to your glass. Top with half of the mango, the remainder of the yogurt, and the remainder of the mango. Garnish with lime zest to serve.

*You can substitute mango for your favorite fruit - strawberries, blueberries, pineapple, kiwi, etc.

I LOVE Greek yogurt. This looks so good!! When mango isn't in season, do you use frozen? I'm always afraid of frozen :)

Hi Elizabeth - this recipe is really delish! I usually am able to find fresh mango at the store. Sometimes it's not ripe so I let it sit on the counter for a few days. I haven't tried it with frozen mango, but it should work once it's thawed. Don't be afraid of frozen fruits and veggies, they are usually frozen at their peak of freshness. That's why they are so bright and pretty :) let me know how it works out.

Wow! All your recipes look delicious AND healthy, I love eating this way and you make it so fun. Thanks for the encouragement! My husband is trying to gain muscle and fat, while I'm just trying to maintain a healthy weight, nutritional lifestyle and it's hard to cook for both of us when we both are doing different things. But these are great ideas. Thank you :)

I found your blog through Pinterest just now, and I really love it! I am browsing around here and find more and more wonderful recipes. Healthy, delicious and so motivational :-). Definitely a website to remember and return to.
