Ginger Cinnamon Apple Bread

You'll Need:
2 medium Royal Gala apples (or your favorite apples)
1/2 tablespoon light butter
1 1/2 teaspoons ground ginger, divided
1 1/2 teaspoons ground cinnamon, divided
1/4 cup raisins
1 egg
1 egg white
1 teaspoon vanilla
1/4 cup agave nectar
1/4 cup milk
1/4 cup canola oil
1 cup whole wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
cooking spray for baking
1. Preheat the oven to 350 degrees.
2. Peel both of the apples, and chop both into a small dice. Place half of the apples in a food processor and process until smooth, like applesauce. Set aside.*
3. Preheat the butter in a pan over medium heat. Add the remaining diced apple, raisins, 1/2 teaspoon of ginger and 1/2 teaspoon of cinnamon, and cook until the apple softens, about 5-10 minutes.
4. In a large bowl, whisk together the applesauce, egg, egg white, vanilla, agave, milk, and oil.
5. In a separate bowl, whisk together the remaining teaspoon of ginger, teaspoon of cinnamon, flour, baking powder, and salt.
6. Add the dry ingredients to the wet ingredients and stir until combined. Stir in the cooked apples and raisins.
7. Spray a loaf pan with cooking spray for baking. Pour the batter into the pan. Bake for 45 minutes, or until a knife or pick inserted into the cake comes out clean.
*Don't have a food processor? Substitute one of the apples for half a cup of unsweetened applesauce.
