Spinach, Tomato & Feta Cheese Frittata
This light breakfast dish is full of flavor to get your day started on the right foot. Packed with nutrients and vitamins, it's the perfect make-ahead meal for one if your mornings are usually disastrous. I make a couple in advance and keep them in the fridge for a quick breakfast.

You'll Need:
1 teaspoon olive oil
2 egg whites
1/4 cup tomato, seeded and chopped (or 1 plum tomato)
1/4 cup frozen spinach, thawed and drained
1 tablespoon feta or goat cheese crumbles

Here's How:
1. Heat the olive oil over medium heat in a small egg pan.
2. In a bowl, use a fork to whisk together the egg whites, tomato, spinach, and cheese. Season with salt and freshly ground black pepper.
3. Pour the eggs into the egg pan and cover with its lid. Cook for about 10 minutes, or until the eggs are set.

How do you recommend reheating this if it is made ahead of time?

Microwave it for 30 seconds or so, that way it just warms and doesn't dry out. You can also put it on a dry non stick pan over medium heat. or you can enjoy it cold like the Spanish do ;) that's how I do it.
