Real Mexican Pizza
This is hardly a recipe, but it really hits the spot, either as a quick meal or snack. All you need are a few fresh ingredients to really "think outside the bun."

You'll Need:
corn tortillas
fresh tomatoes, diced
   (or tomato sauce)
shredded mozzarella cheese, reduced fat
dried oregano
your favorite pizza toppings

Here's How:
1. Preheat the oven to 450 degrees. 
2. Lay the tortillas on a baking sheet. Add diced tomatoes (or sauce), cheese, dried oregano, salt and pepper, and a drizzle of olive oil. 
3. Bake about 10-12 minutes, or until crispy and golden brown.

Trying it now....looks very good and smells good!! I believe I am going to try a number of your recipes. They all look good.
