Chicken Soup for the "I Can't Believe I'm
Sick Again" Soul
After bragging about my rock star immune system for years, I have been hit with recurring cases of the flu (or something close to it) three times in less than five months! While it's much easier -- and nicer! -- to have a good friend bring over some soup, it's not so painful -- and sometimes more healthful! -- to just make it yourself.
1 boneless, skinless chicken breast
1/2 cup matchstick carrots
1 small yellow onion, sliced
1/2 cup frozen corn kernels
2 garlic cloves, crushed
2 oz whole wheat pasta
1 tbsp olive oil
salt + pepper
1 tsp garlic powder
the juice of 1 lime
4 cups water
Here's How:
1. Add all ingredients to a large soup pot and bring to a boil. Cook for 10 minutes until chicken is cooked through. Remove the chicken from the soup, and use two forks to pull it apart. Add the shredded chicken back to the soup pot and cook another 10 minutes.
