Salmon Cakes
I knew it wouldn't be long before I took my own advice: I swapped the white fish in my Florida Fish Cakes recipe for salmon -- great success! You can use canned salmon or fresh, I'd say 12-oz would be perfect for either. If you use canned, make sure to fully drain the water before adding the salmon to the bowl with the rest of the ingredients.

Yum! Made these tonight and they were delish! I made them into tiny slider sizes bites and was able to make 10 of them. I served them with cucumbers and a fresh raita (sp?) with the left over Greek yogurt

I have made those today for dinner. It turned out a bit too liquid so I had to add some oatmeal. Still yummy. :)
