Lemon Scented Salmon
The hardest part about this recipe was deciding whether it should fall under "Quick Fixes" or "Everyday Recipes." It's that simple, and that flavorful... with only three ingredients. If you aren't a fan of salmon, pick any fish you like and follow the same exact recipe.
Ready in: 15 minutes
You'll Need:
1 Salmon fillet, about 6 oz.
1 lemon, thinly sliced into rounds
olive oil
salt + pepper
Here's How:
1. Preheat your broiler to the highest setting.
2. Arrange the lemon rounds on a baking dish to form a bed for the salmon, then place the salmon over the round. (For easier clean up, line the baking dish with foil.)
3. Pat the salmon dry with a paper towel to remove excess moisture. Season with salt and freshly ground black pepper, and drizzle lightly with olive oil.
4. Place the baking dish under the broiler for about 5-10 minutes, or until the fish is golden brown and crispy and cooked through. Use a large, flat spatula to carefully transfer the lemon and fish to a serving dish.
Instant brown rice and couscous can be ready in the time it takes to preheat the oven and cook the fish. For a quick salad, toss together some leafy greens, walnuts, cranberries, feta cheese, balsamic vinegar and a drizzle of olive oil.
