BAM! Pasta
Why BAM? Because I felt like Emeril when I opened a bottle of wine and poured some in the pan. This fancy dinner is ready in less than 15 minutes and you don't have to be a superstar chef to put it together.

Serves 2

You'll Need:

4 ounces whole wheat pasta
1 pint baby bella mushrooms, sliced
1 clove garlic, crushed
1 tablespoon olive oil
1/2 tablespoon butter or butter substitute (Smart Balance)
1/2 cup dry white wine (Pinot Grigio)
1 tablespoon fresh oregano or thyme
salt + pepper

Here's How:
1. Bring a large pot of salted water to a boil for the pasta. Cook the pasta according to package directions.
2. Meanwhile, heat the olive oil and butter in a non-stick skillet over medium-high heat. Add the mushrooms and garlic, and cook until golden brown. Season with salt and pepper. Add the wine, using the spatula to scrape the brown bits off the bottom of the pan.
3. Use a slotted spoon to transfer the pasta to the mushrooms, tossing everything together. Add chopped oregano and/or thyme, then serve. Shredded parmesan cheese optional.

I'm not a huge fan of mushrooms. Any thoughts on what you think might be a good substitute?
