This banana bread only tastes like it's sinful, but it's actually really good for you with 100% whole wheat flour and chunky bits of banana.
2 large bananas
1/4 cup canola oil
1/4 cup brown sugar
1/4 cup skim milk
1 teaspoon vanilla
1/3 cup raisins
1 cup whole wheat flour
2 teaspoons baking powder
1/2 tablespoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon salt
cooking spray for baking
Here's How:
1. Preheat the oven to 350 degrees.
2. Add the bananas, canola oil, brown sugar, milk and vanilla to a bowl. Mash and mix together using a potato masher, making sure the bananas stay chunky.
3. In a smaller bowl, whisk together the flour, baking powder, cinnamon, ginger and salt. Add to the wet ingredients, along with the raisins, and mix until just combined -- don't overmix.
4. Transfer the batter to a loaf pan that's been coated with cooking spray for baking (or lined with parchment paper for less fat). Bake 45 minutes, or until a knife or pick inserted into the bread comes out clean.
