The Pig is the Blanket: Part 2
This fancy appetizer will floor your guests. The best part is how super simple it is to make. Or how crazy delicious it is. You decide. It's the fruit sequel to my veggie The Pig is the Blanket.
Dates
Gorgonzola or Feta Cheese (reduced fat or crumbled)
Prosciutto, thinly sliced
Olive Oil
Here's How:
1. Preheat the oven to 450 degrees.
2. Use a sharp knife to cut a slit along the dates, lengthwise. Remove the pits if necessary.
3. Use a tiny spoon to stuff the dates with cheese. Use your fingers to press them shut.
4. Cut the prosciutto into strips, then wrap one strip around each date. Lay on a baking sheet that's been lined with parchment paper or foil for easy clean up.
5. Bake for 10 minutes or until crispy. Remove from the oven and let them cool. Pierce with a toothpick and place on a serving dish.
- You can use center cut bacon instead of prosciutto.
- Instead of dates, you can use dried figs or dried turkish apricots. Just cut a slit into the fruit, stuff with cheese, wrap with ham, and bake.
- Or don't bake! Simply stuff the fruit, wrap with prosciutto and ham. (I don't recommend raw bacon!)
