Speed Racer's Roasted Sweet Potato
You didn't think you could roast a potato in 15 minutes, did you? Sweet potatoes are like a gift from the earth - naturally sweet and extremely healthy. At about 100 calories each, they make a great side dish and an even better snack.
1 medium sweet potato (per person)
1/2 tsp brown sugar
1/4 tsp cinnamon
1 tsp butter substitute, divided
Here's How:
1. Wash the sweet potato. Remove the ends and cut a slit lengthwise down one side of the potato. Wrap in a damp paper towel and microwave for 5 minutes.
2. Discard the paper towel and place the potato in a piece of foil. Add the cinnamon, brown sugar and 1/2 tsp of butter to the inside of the potato, and spread the other 1/2 tsp butter on the foil. Wrap the potato and toast in the oven for 5 to 10 minutes.
