El Platano Loco
Or, the crazy plantain. Go nuts! Choose your favorite white fish (or meat!), pick your veggies, add some hot sauce or spices, and roast it all inside of a sweet, ripe plantain.

You'll Need:
serves 2

2 ripe sweet plantains (dark peel and soft to the touch)
10 oz white fish (like tilapia or mahi mahi)
1/2 cup red onion & red bell pepper, finely chopped
2 cloves garlic, crushed
2 tbsp olive oil
2 tsp chipotle in adobo sauce (or any hot sauce you like)
1 tbsp chopped cilantro
the juice of half a lime
salt + pepper


Here's How:

1. Preheat the oven to 375 degrees. Cut the ends off of each plantain and carefully cut down the middle lengthwise. Be careful not to split the plantains all the way through. Lay them on a baking sheet (that's been lined with parchment paper for easy cleanup). 

2. Lay the fish on a cutting board and cut into 1/2-inch cubes. Add the fish to a bowl, along with the red onion, red pepper, crushed garlic, olive oil, adobo sauce, cilantro, lime juice, and salt and pepper to taste.

3. Use a spoon to stuff the plantains with the fish mixture. Drizzle with extra olive oil and roast in the oven for 20-25 minutes.

I just finished eating one of these ten minutes ago, and I couldn't get back on here fast enough to tell you how amazing this is! Thank you for the recipe. The best part about this recipe is that, without clashing, it manages to be a dessert and a dinner in one. The magic of plantains, I guess!
