Chick's Peas
Put down the potato chips! These salty, crunchy chickpeas make for a satisfying snack with none of the guilt. Makes an original appetizer, too!

You'll Need:
1 15 oz can chickpeas, rinsed and drained
2 tsp olive oil
1 tsp chili powder
salt + pepper

Here's How:
1. Preheat the oven to 350 degrees.

2. Rinse and drain the chickpeas, then place them over a paper towel and pat them dry. Transfer them to a bowl. Add the olive oil, chili powder, and a pinch of salt and pepper. Toss, then transfer to a baking sheet that's been lined with aluminum foil or parchment paper.

3. Bake for a total of 45 minutes, stirring them around with a spatula twice during the baking time to make sure they don't burn. Remove from the oven and let cool.

Notes:
Instead of chili powder, you can use ANY spices you like - paprika, curry powder, garlic powder - anything goes!

I absolutely LOVE this recipe, it's so delicious and filling! My only problem is even after leaving them in a little longer, I still can't get them crunchy. Any suggestions?

My chick peas get crunchy. I cook them 20 min on the 2nd to bottom rack, then 20 min on the 2nd to top rack at 400 degrees.

These were amazing! I would also love to see more snacks, my problem is eating healthy and then coming home and binging before dinner!
