French Girl's Toast
They say French women don’t get fat and I just came up with a new reason why. My skinny version of French toast stars whole wheat cinnamon raisin bread – it’s slightly sweet and thinly sliced, so you can stack them high and still feel good about your meal.

Serves: 4 (2 slices each)



You’ll Need:

8 slices Whole wheat cinnamon raisin bread
1 egg
1 cup milk
1 tablespoon brown sugar
1 teaspoon vanilla
½ teaspoon cinnamon
2 tablespoons butter or substitute (I Can't Believe It's Not Butter
      or Smart Balance)

Here’s how:

1. Whisk the egg, milk, brown sugar, vanilla and cinnamon in a baking dish. Mix well so the egg is evenly distributed throughout. Add the bread to the milk and let it soak for a minute or so – make sure to coat both sides.

2. Heat ½ tbsp of butter in a large skillet over medium-high heat. When the butter melts, add the bread to the pan. Lower the heat slightly so it doesn’t burn. Cook for 2 minutes, or until the first side is golden and toasty, then flip. Cook another 2 minutes.

3. Serving suggestions: Top with fresh fruit, pure maple syrup, honey, or light whipped cream.
