FlapJack -o'- Lanterns
... a great excuse to treat myself to pancakes and chocolate. Happy Halloween!

*makes about 15 small flapjacks

You'll Need:
7.5 oz canned of pumpkin (half the can)
1-1/4 c milk
1 egg + 1 egg white
1 tsp vanilla
2 tbsp brown sugar 
3/4 c whole wheat flour 
1/4 tsp baking powder
1/2 tsp cinnamon
1/4 tsp ground allspice
1/3 c dark chocolate chips
pinch salt
butter substitute

Here's How:
1. In a large bowl, whisk together the pumpkin, milk, eggs, vanilla and brown sugar. Set aside. In another bowl, whisk together the flour, baking powder, cinnamon, allspice and a pinch of salt.

2. Add the dry ingredients and chocolate chips to the wet ingredients and mix with a spatula until just combined. 

3. Heat 1/4 tbsp of the butter in a large pan over medium heat. Use a 1/4 cup measure to pour the batter into the pan. Cook for about 2 minutes, or until the flapjacks are done around the edges. Carefully flip them using a rubber spatula, and cook until the second side is light brown. (To speed up cooking, try covering the pan with a lid until you're ready to flip the pancakes.)

4. Serve with 100% pure maple syrup or light whipped topping.

To make a jack-o'-lantern, pour 1/2 cup batter into the pan. Quickly arrange the chocolate chips to form a face. When the pancake is cooked through, very carefully flip it with a large spatula.
