This dish combines four of my favorite ingredients... and that's all you need! Fragrant basmati rice, savory curry powder, sweet n' salty cashews and bright cilantro. Add a can of rinsed and drained chickpeas or top with grilled shrimp for a complete meal!
1 cup basmati rice
1 tbsp curry powder
½ cup chopped cashews
¼ cup chopped cilantro
1 tsp salt
1. Heat 1 tablespoon of olive oil in a medium saucepan. Add the rice, curry powder, salt and pepper, and cook in the olive oil for about 3 minutes.
2. Add 1½ cups of water to the pot. Cover and bring to a boil. Reduce to a simmer and cook until the rice absorbs all the liquid.
3. Fluff the rice with a fork, then add the chopped nuts and cilantro.
