Chunky Cucumber Yogurt Sauce

This sauce comes together in less than 5 minutes, depending on your chopping skills. All you need is nonfat, plain Greek yogurt, which is packed with protein, and crisp veggies. It's a salad and a salad dressing at the same time - delicious over spicy meats or on warmed pita or flatbread.

You’ll Need:

1 cup nonfat plain Greek yogurt
1 cup diced hothouse cucumber
1 cup diced fresh tomato
salt + pepper

 
Here’s How:

1. Wash and dry all of your veggies. Slice the cucumber in half lengthwise, and use a small spoon to remove the seeds. They’re edible, but if left in the cucumber, it will make the sauce runny.

2. Cut the sides off of the tomato and remove the seeds. Dice the tomato into chunks, and pat them dry with a paper towel when you are done.

3. Add the diced cucumber and tomato to the Greek yogurt. Add a pinch of salt and freshly ground black pepper. Mix well with a spoon.

I love yogurt sauce ever since the day i tried it on a gyro. I love this recipe because its super easy and goes on everything! (fish especially) Also if you don't feel like buying Greek yogurt (it gets expensive when buying it for a large family) there's a website I found which shows you how to strain your own from regular yogurt.

I am not a huge Tomato fan, I only enjoy them when they are cooked! Do you have any suggestions another veggie to use in this? My other thought is to just finely dice the tomato so I am not tasting it completely... I find that I don't mind them as much when they are small and incorporated with other ingredients.
