Curried Soba Noodles
It's not hard to stay on track when you figure out the tiny tricks that make a really big difference. Curry dishes are usually rich and creamy - delicious, yes, but healthy, not so much! The reason for this is the coconut milk. Even when you go for the light version, 1/4 cup has 3 grams of saturated fat -- that's not the kind you want to be eating. I found a little way around it.

I was meat free for 2 1/2 half months, quite the record for anyone who knows me well. As it turns out, Alicia was right on the money: a diet rich in whole grains, vegetables and healthy fats is the key to making your body work at its absolutely best.

Curried Lentils

Lentils are packed with protein and fiber--when they are paired with rice (3/4 parts lentils and 1/4 parts rice) they form a complete protein. The curry powder adds a delicious kick. Not a fan of it? Leave it out. This makes a big pot, so freeze leftovers in small containers and enjoy it many times over!
