I have a lot of frozen pre-cut fruit hanging out in a ziploc bag in my freezer -- they were leftover from the fruit skewers we put out at my sister's baby shower. I had to ask if by banana they meant what we call bananas or plantains. As it turns out, it was plantains. The server warned me against it because she finds it too sweet. This made me want to try it even more! HummuSo Smart Green Salad I love salads, I hate bottled salad dressings. All humbleness aside, I felt like a genius when I turned my hummus into a rich, creamy and delicious dressing for greens and veggies. And let's be real here... what healthy gal doesn't already have hummus in her fridge? Sweet and Sour Soup This impromptu soup may become one of my favorites. It was supposed to be a Creamy CarroTomato Soup, until I decided to throw a few more ingredients in the pot and take it to a whole other level. You'll love it. Curried Coconut Pan Roasted Sweet Potato Soup I'm absolutely obsessed with curry and coconut, and I don't care who knows it! This soup is sweet, spicy, creamy and so easy to make... if you like a little heat, this will rock your world! Miso Hungry Mushrooms Yum-O! Another fake out on take-out, ready in 10-15 minutes, tops! It's light, yet packed with flavor with just a handful of accessible ingredients. Zucchini Ragout Ragout is traditionally a rich, flavorful stew of meat (beef, pork, chicken or fish), vegetables optional. My version is rich, flavorful and vegetables-only based. Serve over whole grain pasta, rice or couscous, or top over flatbread and sprinkle with goat or feta cheese for extra flavor. |
