Raspberry White Chocolate Chip Waffles
Played with my waffle recipe this morning by adding some fresh raspberries and white chocolate chips that I had leftover from the Valentine's Day muffins I baked for the girls at work -- and what a great idea it was! I love the bite of the raspberry seeds and the intense flavor that develops when they cook on the waffle iron.

Ceviche de Mango
 I love me a good ceviche, but sometimes the fish isn’t all that fresh. Here is a refreshing remix – ripe, sweet mango is tossed together with tangy lime juice and thinly sliced red onion. This makes a great appetizer and also a  very sweet topping for grilled meats.

Salmon Cakes
I knew it wouldn't be long before I took my own advice: I swapped the white fish in my Florida Fish Cakes recipe for salmon -- great success! You can use canned salmon or fresh, I'd say 12-oz would be perfect for either. If you use canned, make sure to fully drain the water before adding the salmon to the bowl with the rest of the ingredients.

Mediterranean Couscous

Crispy Cuban Fish
This dish was ultimately born by accident. I'm a lot better at handling my fish now, but it's broken apart on me countless times before! I make this fish like I would make a Cuban vaca frita -- shredded flank steak "fried" with tons of garlic and lime. And what goes better with lime than fish? Maybe some tequila, but that's another story.
