Super Skinny Spaghetti Bolognese
This is where it's at! I tried spaghetti squash for the first time a few weeks ago and couldn't believe how easy, delicious and misleading it is. I can't eat it without feeling guilty, and have to constantly remind myself there are only 25 calories in a cup. I know this because I make myself Google the nutrition facts every time. Here it's serve with one of my faves - a bolognese sauce, also made skinny with lean turkey breast. Really rich, yet really light. What's not to love?

Pesto Pasta Salad
I call this a pasta because I enjoyed it cold, having made it with leftover flank steak from last night. I had a huge bunch of cilantro in the fridge (my favorite herb, ever!) so I decided to make a bright, lemony pesto with it. Whether you eat this warm or cold, it's definitely a winner!

The Fit Cook's Pho
I love when recipes come together by accident! I was sauteing some veggies for a frittata and made more than I needed. I put the leftovers in a big white bowl and suddenly imagined them in broth and noodles. Just a few minutes later, dinner was served.

The Skinniest Pasta
This is way easier than it looks. I tried this once at a local restaurant and it was delish; however, I knew there was a little too much fat in the meat and the dish was covered in cheese. People, you don't have to cover healthy food in cheese for it to taste good... if you're making healthy food good! Here is pasta you will never feel guilty about.

Skinny Carbonara
I hate to say it, because it cost my parents a lot of money to get there (thanks, Mom and Dad!), but my Carbonara beats the one I had in Rome. While this recipe isn't completely guilt free, it is a much lighter version of the original, and just as satisfying. 
And talk about easy...

Mom's Lasagna Made Easy
...and a bit healthier. My fabulous mom [gladly] gave up cooking when I took over the kitchen. I was more than happy to do all the cooking, but still craved her weekly rotation of dinners: homemade chicken tenders, breaded steaks, spinach gratin, mashed potatoes, fried plantains, and her lasagna.

Curried Soba Noodles
It's not hard to stay on track when you figure out the tiny tricks that make a really big difference. Curry dishes are usually rich and creamy - delicious, yes, but healthy, not so much! The reason for this is the coconut milk. Even when you go for the light version, 1/4 cup has 3 grams of saturated fat -- that's not the kind you want to be eating. I found a little way around it.
