Skinny Bang Bang Shrimp
Bang Bang Shrimp is a crowd-pleaser, there's no doubt about that. But it's never a pleasure to feel yucky after devouring it. I found a way to make it light, easy and with all the BANG that you could want.
Skinny Quiche
Every morning, I walk by the French bakery at my building and crave quiche. Creamy, cheesy, gooey quiche. And I always resist. Last Sunday, the craving inspired me to try making my own. Alas, I enjoyed creamy and cheesy goodness without any of the guilt.
The Fit Cook's Pho
I love when recipes come together by accident! I was sauteing some veggies for a frittata and made more than I needed. I put the leftovers in a big white bowl and suddenly imagined them in broth and noodles. Just a few minutes later, dinner was served.
Miso Hungry Mushrooms
Yum-O! Another fake out on take-out, ready in 10-15 minutes, tops! It's light, yet packed with flavor with just a handful of accessible ingredients.
Curried Soba Noodles
It's not hard to stay on track when you figure out the tiny tricks that make a really big difference. Curry dishes are usually rich and creamy - delicious, yes, but healthy, not so much! The reason for this is the coconut milk. Even when you go for the light version, 1/4 cup has 3 grams of saturated fat -- that's not the kind you want to be eating. I found a little way around it.
D.I.Y. Take Out: Spicy Crispy Beef
You can make this yourself in less time than it would take to have it delivered. Plus, less fat, less sodium, less sugar and no weird additives.
D.I.Y. Take Out: Orange Chicken
My version of this Asian favorite uses whole wheat bread crumbs and very little olive oil to achieve crunchy, golden goodness. Fresh squeezed orange juice and honey make the delicious glaze.
