Lime Soup
I was introduced to this dish a couple of weeks ago during a work trip to CasaMagna Marriott Cancun Resort. I was in my hotel room getting some work done and hungry for something light, yet satisfying. I couldn't resist the sound of "Lime Soup," made with shredded chicken, tomato broth, fresh corn tortillas and a healthy squeeze of lime. Turns out this soup is traditional in Mayan cuisine, and easy to replicate at home.

Inspired by lunch at La Cueva del Chango in Playa del Carmen, Mexico, this soup just tastes natural and authentic. There are no crazy spices and stocks to add flavor, it all comes from the ingredients -- poblano peppers, onions, garlic, cilantro, yogurt and chicken breast. It's what I love most about authentic Mexican cuisine.


 
 
Cheesy Shrimp {and Chicken} Rice
A few awesome things about this recipe: 1) it's pretty fast 2) uses few ingredients that you might already have at home 3) it tastes rich, but it's really light 4) it's a one-pot wonder 5) I was testing for 2 servings and yielded at least 3 or 4... who doesn't like that?

I learned this technique from a friend who, at first, made me think he was going to start a fire. And he almost did! After tasting it, I realized it was a delicious way to make delicious "barbecued" chicken, minus the fuss of the grill.

Chicken Roasted with Cherries

Coconut Curry Pita Pocket
I got the idea for this recipe after having the Coconut Curry Bun from Gigi's in Miami. What's missing from my version is the fluffy, delicious Korean bun, but for fit purposes, the whole wheat pita pocket is an excellent alternative.
