Fruit & Feta Summer Salad
Here's an easy one for the dreadfully hot days we are having: add some refreshing fruit to your salad for a sweet twist. I say fruit instead of watermelon (as pictured) because you can easily swap the watermelon for sliced peaches, pineapple, berries, cherries, mangoes or a bit of each.

Girl's Night Sliders
Wouldn't your friends thank you if you treated them to a yummy meal that didn't send them home wishing they hadn't worn their skinny jeans? Here is one idea. I took the ultimate bar food and made it skinny - these sliders are very low in fat, and high in protein and fiber.

Caprese Salad with White Balsamic Vinegar Reduction
Who doesn't love a good, fresh Caprese Salad? To make the reduction, bring 1 cup of white (or dark) balsamic vinegar to a boil in a medium sauce pan. Boil until the vinegar reduces by half and takes on a syrupy consistency. Allow to cool and pour over the salad of freshly sliced ripe tomatoes, mozzarella cheese, shredded basil, extra virgin olive oil and salt and pepper.

Ceviche de Mango
 I love me a good ceviche, but sometimes the fish isn’t all that fresh. Here is a refreshing remix – ripe, sweet mango is tossed together with tangy lime juice and thinly sliced red onion. This makes a great appetizer and also a  very sweet topping for grilled meats.
