Greenmarket in July Pasta
The sequel to my Greenmarket in July Pizza. I made this recipe over and over again while living in NYC during the summer. I had never seen zucchini so big and onions so... raw, i.e. still attached to their roots. Beautiful. Add Agata & Valentina's fresh whole wheat fettucini, and there was no reason not to enjoy a big plate of veggie vitamin-enriched pasta!

The Pig is the Blanket: Part 2
This fancy appetizer will floor your guests. The best part is how super simple it is to make. Or how crazy delicious it is. You decide. It's the fruit sequel to my veggie The Pig is the Blanket.

Chick's Peas
Put down the potato chips! These salty, crunchy chickpeas make for a satisfying snack with none of the guilt. Makes an original appetizer, too!

Skinny Italy Burger
Just another one of my veggie burger variations.  Buon Appetito!

Chunky Curried Chicken Salad
Chicken salad has earned a bad rep because it's usually smothered in mayonnaise. I'm here to change that!

Veggie Bolognese
Earlier this year I underwent yet another health revolution: After reading "The Kind Diet" by Alicia Silverstone, I opted to eat more whole grains and vegetables as a source of protein. I was meat free for 2 1/2 half months, quite the record for anyone who knows me well. As it turns out, Alicia was right on the money: a diet rich in whole grains, vegetables and healthy fats is the key to making your body work at its absolutely best.

Eggplant Parmigiana
I don't meant to toot my own horn, but this easily falls into one of my top, "OMG-I'm-in-heaven" recipe tasting moments. I mean, really... why go out for this when you can make your own for a fraction of the cost and the fat?

5-Star Chili
This is the real thing: a hearty, beefy, spicy chili anyone can make. I used lean ground beef (93/7) but you can make this with ground turkey or chicken breast if you prefer. Regardless, it's perfect for the cool weather ahead.

La Bella Pasta
This easy pasta dish was a hit in my family, picky eaters and all. Made with very few, but very fresh ingredients, it's naturally delicious and ready in the time it takes to boil the pasta water and cook the noodles.

El Platano Loco
Or, the crazy plantain. Go nuts! Choose your favorite white fish (or meat!), pick your veggies, add some hot sauce or spices, and roast it all inside of a sweet, ripe plantain.
