Girl's Night Sliders
Wouldn't your friends thank you if you treated them to a yummy meal that didn't send them home wishing they hadn't worn their skinny jeans? Here is one idea. I took the ultimate bar food and made it skinny - these sliders are very low in fat, and high in protein and fiber.

Tenderly Tangy Chicken Thighs
I had the idea to marinate chicken in yogurt a few weeks ago. Then I saw Alex Guarnaschelli do it during her demo at the South Beach Wine and Food Festival, and I was sold on the idea (by the way, hers was the best demo I have ever seen - this woman rocked!). She barbecued a whole chicken, I roasted mine. In any case, this recipe is very practical because it's easy, healthy and cheap!

The Skinniest Pasta
This is way easier than it looks. I tried this once at a local restaurant and it was delish; however, I knew there was a little too much fat in the meat and the dish was covered in cheese. People, you don't have to cover healthy food in cheese for it to taste good... if you're making healthy food good! Here is pasta you will never feel guilty about.

Skinny Monkey Oats
This is hardly a recipe, but it's a great idea. I used to hate oatmeal, until I learned how to make it delicious. I was on the treadmill this morning thinking of what I would have post workout, and I thought of this recipe. It definitely hit the spot after a good run.

Smashed Baby Yams
This is one of my favorite recipes to date! I've seen people make these with Yukon or small red potatoes. What I love about mine is how beautiful they are (look at those colors!), and the sweetness that the baby yams add. Plus, they are easy to make and beautiful to entertain with... but I still made these just for me.

Skinny Carbonara
I hate to say it, because it cost my parents a lot of money to get there (thanks, Mom and Dad!), but my Carbonara beats the one I had in Rome. While this recipe isn't completely guilt free, it is a much lighter version of the original, and just as satisfying.
And talk about easy...

Strawberry Cheesecake Souffle
This recipe turned out to be even lighter than I had planned. I was testing for two servings and it yielded four! Anyhow, I was surprised by the flavors and texture - it tastes a lot like a Tres Leches, but with none of the butter, flour, or condensed milk. It's light, airy and very delish... enjoy!

Caprese Quinoa Salad
I forgot how much I love quinoa -- then I made this! This recipe is great as an entree or as a side dish. As an entree it serves two, as a side dish it can serve four. Remember, quinoa is the only grain that's a complete protein, meaning it contains all of the essential amino acids. It's also packed with fiber, and it's cheap!

Crispy Coriander Chicken

Just because you are having chicken for dinner (yet again!) doesn't mean it has to be boring. Here's a tip: play with your spices. They can add great flavor with little to no fat. Here is an easy recipe for tasty, crispy, juicy chicken breast.
