Meatless Monday Salad
Fresh baby spinach, 1/2 cup garbanzo beans, diced red bell pepper, sliced black olives, toasted whole grain pita bread and lemon oregano dressing (the juice of 1/2 lemon, 1/2 tbsp olive oil, dash of agave or honey, fresh or dried oregano and salt + pepper.)
